Chocolate Chip Pancake Mini Muffins.

Simple ingredients, Simple to make.

In fact, they are so simple to make my almost four year old practically mixed them up himself. I like to have them on hand for school day breakfasts or a quick after school snack. For breakfast, the boys like them with a little vegan butter sliced into the middle & a little 100% pure maple syrup for dipping. After school, they usually just grab them and go, as is.

We set out to make these on Monday and I quickly realized that we didn’t have two of the seven ingredients (that I typically always have on hand), so we improvised and they turned out great! Actually the one substitution I'll probably use again, intentionally, in the future. I’ll fill you in below!

Go-Go’s to the rescue!

Unsweetened applesauce, we didn't have it, oops. However, organic Go-Go’s saved this moment. & My lead chef was totally up for (& really into it) the squeezing challenge.

Pleased with our rescue mission we moved on and added the flour, then the baking powder and then “Oh no” …we didn’t have any non-dairy milk or any milk for that matter. I was about to make a quick trip to the store, but I remembered that we had some Ogain Kids Plant Protien Shakes in the cabinet & thought “Those will work”. & They did! They worked so well in fact that I will probably use them again in the future, due to the fact that they have plant-based protein, minerals, fruits & veggies in them. Typically I make these, GF & Dairy-free…so that I can enjoy a few myself (plus the kids don’t notice a difference either way). The boys are not GF or Dairy-Free, but having said that, I don’t mind them skipping out on them from time to time either. So despite our 2 out of 7 substitutions these came out just as good as usual & are already almost completely gobbled up. I love when something seems like it is going wrong, but actually opens up an opportunity for something to work out even better. Some of my favorite recipes have come about this way. & If I think about it, maybe even a couple of situations in life too ;).

the What & the How.

INGREDIENTS

1 3/4 cup Flour (I use Bob’s Red Mill 1 to 1 GF Baking Flour, however, you could easily use regular flour)

2 tsp Baking Powder

1 tsp. Baking Soda

1 tsp. Salt

1 1/3 Milk (I use unsweetened Vanilla Coconut, Almond or Oat milk, but like I mentioned above on Monday I used the Kids Plant based protein shakes & you could also use regular milk instead)

1 cup Unsweetened Applesauce (Or Go-Go’s, if ya got ‘em)

1/4 “heavy handed”cup Chocolate Chips (I use Enjoy Life Baking Chocolate Chips)

INSTRUCTIONS.

Preheat oven to 325 degrees.

Mix all of the above together in a bowl, then add mixture to non-stick mini muffin pan. …Personally I always “grease” the muffin pan with coconut oil….because I have trust issues with non-stick bake ware.

Next bake in oven for 12-15ish minutes. Or until the tops begin to get golden & they are cooked through. Tooth pick test, ya know? ;)

Let cool and serve as is, or with butter & syrup…you pick!
